Greek Style Spinach

This quick, easy side dish never fails to delight.  I fashioned this recipe after the filing found in Spanikopita, Greek spinach pie.  You can use fresh or frozen chopped spinach, but please splurge on the fresh herbs.  Dried herbs won’t due this dish justice.

Ingredients:

  • 1 ten ounce box frozen chopped spinach
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint leaves, chopped
  • 2 ounces good feta cheese, diced or crumbled
  • 1 teaspoon olive oil
  • squeeze of fresh lemon juice
  • salt and pepper to taste

You can prepare this dish using the microwave or a small sauce pan on the stovetop.  I use the microwave.  As for the spinach, I like the frozen chopped better than the fresh for this recipe.  If you buy fresh, you will need more than you think.  Buy a large bag of pre-washed spinach and chop, in batches, using a food processor.

Heat frozen spinach according to package directions.  Drizzle with olive oil.  Hit it with a squeeze of fresh lemon juice.  Add fresh herbs and salt and pepper and mix to combine.  Gently fold in the feta cheese.  That’s all there is to it!
