Green Beans with Caramelized Shallots

Try this easy, delicious recipe as a holiday meal side dish.  It’s my lightened up replacement for the classic green bean casserole.  I like it better than the traditional dish and it is one third the calories and about one tenth the fat!



  • 2 teaspoons olive oil
  • 6 shallots, peeled and quartered length-wise
  • 12 ounces green beans, trimmed and washed (try Green Line in the microwavable bag)
  • sea salt and black pepper to taste

Heat the olive oil in a non-stick fry pan.  Add the quartered shallots and cook over medium heat, stirring occasionally, for about 30 minutes or until shallots are nicely caramelized.  Don’t over stir the shallots or they will break up too much.

Microwave the green beans for 4 minutes or per the package directions.  Toss the heated green beans with the shallots to coat.  Add salt and pepper to taste and serve immediately.

Make ahead note:  The shallots can be made ahead and reheated just before adding the warmed green beans.
