1 ripe mango
1 California avocado
zest of one lime
juice of 2 limes, about 2 tablespoons
1 bunch of cilantro, 2 tablespoon chopped, remaining for garnish
2 tablespoons vegetable oil
coarse ground salt to taste
1 bag mixed greens – I used butter lettuces
in a small mixing bowl, combine the mango, avocado, lime zest cilantro and vegetable oil. Stir to mix completely. Salt to taste. This can be made a day ahead of time. Cover and keep refrigerated until ready to serve.
When ready to serve, arrange lettuce on plates. Spoon dressing over top and garnish with fresh cilantro.
