So Simple Potato Salad

The trick to making this tasty simple potato salad is to mix all the ingredients while the potatoes are still warm.  The warm potatoes soak up the mayonnaise and seasonings much better than if they were left to cool first.

Ingredients:

  • 4 cups redskin potatoes, peeled and cut into bite sized chunks
  • 1/3 cup mayonnaise
  • 1 tablespoon sour cream
  • 2 tablespoons fresh chopped chives
  • 1 teaspoon salt
  • 1 teaspoon white pepper

Boil potatoes until tender, about 15 minutes.  While potatoes are boiling, assemble the remaining ingredients in a large glass bowl.  Drain potatoes and immediately stir into remaining ingredients.  Stir very gently, as the potatoes will be more fragile while they are warm.  Adjust mayonnaise and seasonings to your own taste.  Some folks like a very lightly dressed salad, others like more mayonnaise.

Cover bowl with plastic wrap and refrigerate for at least 2 hours to completely cool the salad.  Serve and enjoy!
