This mango salsa is the perfect balance between sweet and tart. It goes great with any pork dish. It also marries well with other tropical dishes like; margarita snapper, jerk chicken, etc.
- 2 large mangos, peeled and diced
- 1/2 red onion, diced
- 1 lime, zested and juiced – about 1 teaspoon juice
- 1/2 cup fresh cilantro, chopped
- 1 teaspoon rice vinegar – if you use a less mild vinegar, use less
- salt to taste
In a medium glass bowl, stir all ingredients together. Let rest for at least a half hour to allow flavors to mingle. Garnish with fresh cilantro and lime.
