The kids had another great day. My daughter is home from McGill University with her young man who is also a McGillite. McGillite? Hey don’t get mad, just correct me, ok? This morning, well actually sort of the crack of noonish, I made them corned beef hash with poached eggs and toast from the Sunday leftovers. Really delish, I’ll post the recipe soon. It’s so nice to have a college boy around the house, he has an appetite that warms my heart!
Afterwards, they went off to see the alligators in the Everglades. The kids took the air boat ride from Holiday Park which is only twenty minutes from our home. After the boat ride they went to see the alligator wrestling at the same park.
They returned home with big appetites (as ordered) and I served up one of my favorite go-to meals for company; Lemony Shrimp with Linguine and Arugula. Easy, quick, yummy and good visual wowee factor. After dinner they went off to meet up with Barbara’s friends from her old high school band along with the band directors, fresh from a rehearsal. She wants to show off her young man, who plays the tuba, you know. I’m sure that’s worth bragging about.
