Sunday, February 14, 2010 Caribbean Pulled Pork

I know, I know, I made the pulled pork for the Super Bowl party a week ago.  But, it went so fast I didn’t get any and my mother-in-law wasn’t there, so she didn’t get any either.  So, I made it again, this time as a main course along with coconut rice, a salad and store bought cheese cake with homemade raspberry sauce.  I had bunches of grapes left over from the Super Bowl party and I wanted to find a way to use them.  Did you know you can roast them with a little olive oil and salt and pepper?  I thought that might be a bit to exotic for my guest.  I came up with a salad of arugula, red grapes and blue cheese with a shallot vinaigrette.  It was delicious.


Mum hardly ever eats everything on her plate, but for this meal, there wasn’t a scrap left.  She loved everything!
