I made this couscous with Marrakesh Express brand couscous. They have a variety called “Grande” which is large pearls of couscous pasta. You can use whatever brand you like.
Follow the package directions, but substitute beef, chicken or vegetable broth for the liquid. Use olive oil for the fat in the recipe (as opposed to butter or vegetable oil).
To the cooking liquid, add fresh chopped (dried is ok) oregano, garlic powder to taste, a squeeze of fresh lemon juice and salt and pepper to taste. Garnish with fresh chopped oregano.
Taste after cooking and add salt and pepper if needed. I find couscous can be a little bland.
